Christmas Leftovers Pie

So you overdid it on the food front yet again this year. You’re about to wrap yourself in bacon because you are a pig. But it was all fun and games on the big day, now your mum is forcing you to eat turkey sandwiches for the foreseeable future.

Not to worry!!! This pie makes you forget all your turkey nightmares and hides all those leftovers under a delish pastry lid.

Before we dig in, here’s this week’s kitchen goss

Kitchen Goss

Alright so me and the famalam went to see Grinch the musical at the Lowry and it was a rollercoaster from start to finish. First of all we brought the average age up by 40 years, must remember to bring a small child along with us next time.

Second, Matt Terry played the dog Max. Yes you heard, Matt Terry – that geeza that won X Factor in 2016 – is now a musical dog. The barking/growling was both comedy gold and uncomfortable to watch. Overall 11/10 would highly recommend for a laff.

Anyway moving swiftly on, lots of pie to make.

Like everything in my life, this is inspired by Mary Berry and her chicken pot pie recipe.

Ingredients

  • Leftover turkey (about 1kg or just what you haven’t scoffed)
  • 1.25 L chicken stock
  • 1 onion
  • 2 celery stalks
  • 2 garlic cloves
  • 4 carrots
  • 3 potatoes
  • 45g butter
  • 3tbsp plain flour
  • 150g frozen peas
  • 175g pastry – just pop to sainos or make it yourself if you’re feeling funky
  • 1 egg

Method – Makes 1 huge pie

  • preheat your oven at 190C
  • Pop the stock, onion, celery, garlic, carrots and potatoes in a pan and bring to a boil. Cook veggies until soft
  • Chipperty chop your leftover turkey into bitesize pieces and add it to the stock and veg
  • After 5 mins, remove the turkey and veg and set aside, but KEEP THE STOCK!!!1!1! (well 600ml of it anyway)
  • Melt the butter in another pan and add the flour
  • Stir for 1 minute, then add your 600ml of stock
  • whisk until it bubbles and boils and becomes thicc
  • Add your turk and veggies back in, and pop in your frozen peas
  • Cook for 2 mins, then set aside to chill out
  • It’s pastry time
  • Roll it out (or make it if you insist) on a floured surface
  • Chuck your pie filling into a big pie dish (2L pie dish)
  • Lovingly lay over the pastry lid
  • You can make some dΓ©cor using the extra pastry or leave it plain if you’re dull
  • Whisk the egg and brush over the pastry to make it nice and golden and shiny
  • Whack it in the oven for about 30mins or until the pastry looks ready to scoff

  1. That pie looks great, and makes me want a slice! We went to a restaurant for dinner on the 25th, so we have no leftover turkey. But next Christmas, who knows?
